Prepare the Quinoa
If not already cooked, rinse 1/3 cup of quinoa under cold water. Combine the quinoa with 2/3 cup of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Cut the Watermelon
While the quinoa is cooking, cut the watermelon into bite-sized cubes. You should have about 2 cups of watermelon.

Combine the Ingredients
In a large bowl, combine the arugula, cooked quinoa, and watermelon. Gently toss to mix all the ingredients together.

Make the Dressing
In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined.

Dress the Salad
Drizzle the dressing over the salad mixture in the large bowl. Toss gently to coat the salad evenly with the dressing.
