Pasta Preparation

Cook the Bucatini
Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente, usually about 9-11 minutes. Reserve 1 cup of pasta water, then drain the pasta.
Shrimp Cooking

Sauté the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Add Garlic and Spices
In the same skillet, add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Deglaze with White Wine
Pour in the white wine to deglaze the skillet, scraping up any browned bits from the bottom. Allow it to simmer for 3-4 minutes until slightly reduced.

Add Tomatoes and Spinach
Stir in the chopped heirloom tomatoes and cook for another 5 minutes until they start to soften. Add the baby spinach and cook for an additional 2 minutes until wilted.
