Method

Prepare the Shakshuka

    Sauté the vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5-7 minutes, or until the onion is translucent and the peppers are soft.

    Add garlic and spices

    Stir in the minced garlic, ground cumin, paprika, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.

    Add tomatoes

    Pour in the canned diced tomatoes with their juices. Season with salt and black pepper to taste. Stir well and bring to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld.

    Poach the eggs

    Make small wells in the sauce and crack the eggs into the wells. Cover the skillet and cook for about 5-8 minutes, or until the eggs are cooked to your desired doneness.

Prepare the toppings

    Slice the avocado

    While the eggs are cooking, cut the avocado in half, remove the pit, and slice it into thin pieces.

    Crumble feta cheese

    Crumble the feta cheese into small pieces.

    Chop parsley

    Finely chop the fresh parsley for garnish.

Prepare the crostini

    Slice the baguette

    Cut the baguette into thin slices.

    Grill the crostini

    Brush the baguette slices with olive oil and grill them on medium heat until golden and crispy, about 3-4 minutes per side.

    Plate the dish

    Once the eggs are cooked, remove the skillet from heat. Serve the shakshuka in bowls, topped with sliced avocado, crumbled feta, and chopped parsley.
