Pasta

Method

Preparing the Pasta

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

Cooking the Vegetables

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add bell pepper, zucchini, and carrot; cook for 5-7 minutes until they begin to soften.

  2. 3

    Add Remaining Vegetables

Stir in cherry tomatoes and broccoli florets, cooking for an additional 3-4 minutes until the broccoli turns bright green. Finally, add the fresh spinach and cook until wilted, about 1-2 minutes.

Combining Ingredients

  1. 4

    Mix Pasta and Vegetables

Add the cooked pasta to the skillet with the vegetables. Toss everything together, adding reserved pasta water as necessary to create a light sauce.

  2. 5

    Season and Serve

Season with salt and black pepper to taste. Stir in grated Parmesan cheese and chopped basil. Serve immediately, garnished with additional cheese and basil if desired.
