    Make the Batter

    In a mixing bowl, whisk together the flour and salt. In a separate bowl, whisk together the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until well combined and smooth. Let the batter rest for 30 minutes.

    Cook the Crepes

    Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter. Pour about 1/4 cup of the batter into the skillet, tilting the skillet to spread the batter evenly. Cook for 1-2 minutes until the edges start to lift and the bottom is golden brown. Flip and cook for an additional 1-2 minutes. Repeat with the remaining batter, adding more butter as needed.

Filling and Compote Preparation

    Prepare the Wild Berry Compote

    In a small saucepan, combine the wild berries, sugar, and lemon juice. Cook over medium heat, stirring gently until the berries break down and the mixture becomes syrupy, about 5-7 minutes. Set aside to cool slightly.

    Whip the Cream

    In a mixing bowl, beat the heavy cream and vanilla extract with an electric mixer until stiff peaks form.

Assembly

    Fill and Serve the Crepes

    Spread 2 tablespoons of Nutella onto one half of each crepe. Fold the crepes in half and then in half again to form a triangle. Top with warm wild berry compote and a generous dollop of whipped cream before serving.
