Main Ingredients

Method

Preparation

  1. 1

    Cook the Bacon

In a large pot, cook the bacon slices over medium heat until they are crispy. Remove the bacon, crumble it, and set aside, leaving the bacon drippings in the pot.

  2. 2

    Sauté Vegetables

In the same pot with the bacon drippings, add chopped onion and celery. Sauté until the onion is translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

  3. 3

    Cook Potatoes

Stir in the diced potatoes, chicken broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.

  4. 4

    Add Clams and Cream

Once the potatoes are tender, add the chopped clams and heavy cream to the pot. Stir well and heat through for an additional 5 minutes.

  5. 5

    Finish and Serve

Remove the bay leaf, and stir in the crumbled bacon. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
