Lobster

Bun and Accompaniments

Method

Prepare the Lobster

  1. 1

    Boil the Lobster

Bring a large pot of salted water to a boil. Add the lobster tails and cook for about 8-10 minutes until the shells turn bright red and the meat is opaque. Remove from water and let cool.

  2. 2

    Butter Poaching

In a small saucepan, melt the unsalted butter over low heat. Once melted, add the lemon juice and salt. Remove the lobster meat from the shells and slice into bite-sized pieces. Add the lobster to the butter and gently poach for 2-3 minutes until heated through.

Prepare the Buns and Accompaniments

  1. 3

    Grill the Buns

Brush the outside of the New England-style hot dog buns with olive oil. Grill on medium heat for 1-2 minutes on each side until toasted and golden.

  2. 4

    Prepare Coleslaw

In a large bowl, mix the coleslaw mix with mayonnaise, vinegar, sugar, salt, and pepper to taste. Toss until well combined and refrigerate until needed.

  3. 5

    Cook the Fries

Prepare fries according to package instructions, either baking or frying until crispy and golden brown.

Assemble the Lobster Roll

  1. 6

    Combine and Serve

Place a generous amount of the butter-poached lobster in each grilled bun. Serve with a side of fries and a portion of coleslaw.
