Cannoli Shells

    Prepare the Dough

    In a mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. In a small bowl, beat the egg with the white wine or vinegar. Add the egg mixture to the flour mixture and mix until a dough forms.

    Knead and Rest

    Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll and Cut

    After resting, roll out the dough to about 1/8-inch thickness. Cut into circles about 4 inches in diameter.

    Fry the Shells

    Heat the oil in a deep fryer or heavy pot to 350°F (175°C). Wrap each dough circle around a cannoli tube and secure with a bit of water. Fry until golden brown, about 2-3 minutes. Remove and let cool on paper towels.

Sweetened Cream Filling

    Combine Ingredients

    In a large bowl, mix the ricotta cheese, powdered sugar, and vanilla extract until smooth.

    Whip the Cream

    In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the ricotta mixture until well combined.

    Fill Cannoli

    Using a piping bag, fill the cooled cannoli shells with the sweetened cream filling.

    Melt the Chocolate

    In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

    Prepare the Dip

    Once melted, dip the ends of each filled cannoli into the chocolate, allowing excess to drip off.

    Add Pistachios

    Immediately sprinkle chopped pistachios on the chocolate-dipped ends before the chocolate sets.
