Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix olive oil, salt, and black pepper. Coat the salmon fillets with the mixture and let them marinate for 15-20 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F or 190°C).

  3. 3

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Cooking the Vegetables

  1. 4

    Prepare the Vegetables

Wash and chop zucchini, bell peppers, and asparagus into bite-sized pieces.

  2. 5

    Sauté the Vegetables

In a large skillet over medium heat, add a splash of olive oil. Add the chopped vegetables and sauté for about 5-7 minutes until they are tender but still crisp.

Making the Lemon Butter Sauce

  1. 6

    Melt the Butter

In a small saucepan over low heat, melt the unsalted butter.

  2. 7

    Add Lemon Juice and Garlic

Once the butter is melted, add the minced garlic and lemon juice. Stir and cook for an additional 2-3 minutes until fragrant.

  3. 8

    Finish the Sauce

Remove from heat and stir in the chopped parsley. Season with salt and pepper to taste.

Plating

  1. 9

    Serve the Dish

On each plate, place a grilled salmon fillet, arrange the sautéed seasonal vegetables alongside, and drizzle the lemon butter sauce over the top.
