Potatoes

Method

Preparing the Potatoes

  1. 1

    Wash and Cut the Potatoes

Thoroughly wash the Russet potatoes under cold water to remove any dirt. Cut the potatoes into thin strips, about 1/4 inch thick, to create the fries.

  2. 2

    Soak the Potatoes

Place the cut fries in a large bowl filled with cold water. Soak for at least 30 minutes to remove excess starch, which helps achieve extra crispiness.

  3. 3

    Drain and Dry the Potatoes

After soaking, drain the water and pat the fries dry with paper towels. Make sure they are as dry as possible for optimal frying.

Frying the Fries

  1. 4

    Heat the Oil

In a large, deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature to ensure proper frying.

  2. 5

    Fry the Potatoes

Carefully add a handful of the dried fries to the hot oil, ensuring not to overcrowd the pot. Fry for about 4-6 minutes or until golden brown and crispy.

  3. 6

    Remove and Drain

Once the fries are done, use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to absorb excess oil.

  4. 7

    Season the Fries

While the fries are still hot, sprinkle them generously with salt, black pepper, and paprika to taste. Toss gently to ensure even coating.
