Peel and Cut Potatoes
Peel the russet potatoes and cut them into uniform sticks, about 1/4 inch thick.

Soak Potatoes
Place the cut potatoes into a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
Frying

Heat Oil
In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Dry Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Carefully add a batch of dried potato sticks to the hot oil (do not overcrowd the pot). Fry for about 5-6 minutes or until they turn golden brown.

Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt and pepper to taste.
