Method
Cake Preparation
- 1
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.
- 2
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar and large eggs until well combined and slightly frothy.
- 3
Combine Ingredients
Add the melted chocolate mixture to the egg mixture. Stir in the vanilla extract and a pinch of salt until fully incorporated.
- 4
Prepare Baking Pan
Preheat your oven to 175°C (350°F). Grease an 8-inch round cake pan and line the bottom with parchment paper.
- 5
Bake the Cake
Pour the batter into the prepared cake pan and bake in the preheated oven for 25-30 minutes, or until the cake has set but is still slightly soft in the center. A toothpick inserted should come out with a few moist crumbs.
- 6
Cool the Cake
Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, carefully invert it onto a wire rack to cool completely.
Whipped Cream Preparation
- 7
Whip the Cream
In a mixing bowl, combine the heavy cream and powdered sugar. Using an electric mixer, whip the cream on medium-high speed until soft peaks form.
- 8
Serve
Slice the cooled flourless chocolate cake and serve with a dollop of whipped cream and a generous handful of fresh berries on top.
