Bearnaise Sauce Preparation

    Prepare the Reduction

    In a small saucepan, combine the minced shallots, white wine vinegar, and chopped tarragon. Bring to a simmer over medium heat and reduce until the liquid is about 2 tablespoons. Strain and set aside.

    Make the Bearnaise Sauce

    In a heatproof bowl, whisk together the egg yolks and the strained reduction. Place the bowl over a pot of simmering water (double boiler method) and whisk until the mixture thickens and becomes pale.

    Incorporate the Butter

    Slowly drizzle in the melted unsalted butter while whisking continuously until the sauce is thick and creamy. Season with salt and black pepper. Keep warm.

Croque Madame Assembly

    Toast the Bread

    Lightly toast the sourdough bread slices in a toaster or on a skillet until golden brown.

    Layer the Ingredients

    On one slice of toasted bread, layer a slice of ham and half of the gruyere cheese. Place the second slice of bread on top to form a sandwich.

    Grill the Sandwich

    In a skillet, melt a small amount of butter over medium heat. Place the sandwich in the skillet and grill until the bread is golden and the cheese is melted, about 3-4 minutes per side.

    In a separate skillet, cook the eggs sunny side up, seasoning with salt and pepper to taste.

    Place the grilled sandwich on a plate. Top it with the sunny side up egg and drizzle with bearnaise sauce.
