Preparation

  1. 1

    Prepare the Ingredients

Wash the romaine lettuce thoroughly under cold water. Dry it using a salad spinner or paper towels and chop it into bite-sized pieces.

  2. 2

    Chop the Tomatoes

Dice the heirloom tomatoes into small cubes, discarding the stem ends.

  3. 3

    Slice the Scallions

Thinly slice the scallions, using both the white and green parts.

  4. 4

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet, drain on paper towels, and chop into small pieces.

  5. 5

    Prepare the Eggs

Peel the hard boiled eggs and chop them into quarters.

  6. 6

    Crumble the Blue Cheese

Crumble the blue cheese into small pieces using your fingers or a fork.

Assemble the Salad

  1. 7

    Combine the Base Ingredients

In a large salad bowl, combine the chopped romaine lettuce, diced heirloom tomatoes, sliced scallions, crispy bacon, crumbled blue cheese, and chopped hard boiled eggs.

  2. 8

    Prepare the Dressing

In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and black pepper until well combined and emulsified.

  3. 9

    Dress the Salad

Drizzle the dressing over the salad ingredients and toss gently to coat everything evenly.

  4. 10

    Serve

Serve the Cobb salad immediately, garnishing with additional blue cheese if desired.
