Method

Preparing the Cake

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out the excess.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, combine the unsweetened chocolate and unsalted butter. Stir continuously until melted and smooth. Remove from heat and let it cool slightly.

  3. 3

    Combine Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale in color. Stir in the vanilla extract.

  4. 4

    Mix in Chocolate Mixture

Gradually add the melted chocolate and butter mixture into the egg mixture, stirring gently until fully combined.

  5. 5

    Add Flour and Salt

Sift the all-purpose flour and a pinch of salt into the chocolate mixture. Gently fold until just combined. Do not overmix.

  6. 6

    Fill Ramekins

Evenly divide the batter among the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  8. 8

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully run a knife around the edges to loosen, then invert onto individual plates.
