For the Cod
For the Haricot Verts
Method
Prepare the Cod
- 1
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 2
Prepare Herb Butter
In a mixing bowl, combine the softened unsalted butter, chopped parsley, chopped thyme, minced garlic, lemon zest, salt, and black pepper. Mix until well combined.
- 3
Coat the Cod
Place the cod fillets on a baking sheet lined with parchment paper. Generously spread the herb butter mixture over the top of each fillet, ensuring they are well coated.
- 4
Bake the Cod
Bake the cod in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is cooked through.
Prepare the Haricot Verts
- 5
Blanch the Green Beans
Bring a pot of salted water to a boil. Add the haricot verts and blanch for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge them into an ice bath to stop the cooking.
- 6
Sauté the Green Beans
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- 7
Finish the Haricot Verts
Add the blanched haricot verts to the skillet and cook for another 3-4 minutes. Stir in the chopped dill, lemon juice, salt, and black pepper. Toss to combine and heat through.
