Cook the Fries
Preheat the vegetable oil in a deep fryer or a large pot over medium heat. Once hot, add the frozen French fries in batches, cooking until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove fries and drain them on paper towels. Season with salt to taste.

Cook the Bacon
In a large skillet over medium heat, add the bacon strips. Cook until crispy, about 4-5 minutes per side. Once done, transfer to a plate lined with paper towels to absorb excess grease.
Béarnaise Sauce

Make the Béarnaise Sauce
In a small saucepan, melt the butter over low heat. In another saucepan, combine the shallots, white wine vinegar, and tarragon. Simmer on low for about 5 minutes until the shallots are soft. Strain the mixture and return the liquid to the saucepan.

Assemble the Breakfast Poutine
On a large plate, layer the crispy fries. Top with the crispy bacon strips, followed by the fried eggs. Drizzle generously with the warm béarnaise sauce. Serve immediately.
