Preparation

    Preheat the oven

    Preheat your oven to 375°F (190°C) to ensure it's ready for melting the cheese.

    Prepare protein

    If using pre-cooked shredded chicken or beef, warm it up in a skillet over medium heat. Optionally, season with a pinch of salt, cumin, and chili powder for added flavor.

    Warm beans

    Heat refried beans in a small saucepan over low heat, stirring occasionally until warmed through.

Assembly

    Spread corn chips evenly on a large oven-safe platter or baking sheet.

    Spoon warm refried beans evenly over the chips.

    Distribute the shredded chicken or beef evenly over the beans and chips.

    Sprinkle both cheddar and Monterey Jack cheeses evenly over the top of the chips, beans, and meat.

Baking

    Place the assembled chips in the preheated oven and bake for 8–10 minutes, or until the cheese is fully melted and bubbly.

Topping and Serving

    Remove the nachos from the oven and immediately sprinkle diced tomatoes over the top.

    Dollop fresh guacamole and sour cream across the top of the nachos.
