Prepare Chicken Filling
Season and cook the chicken
In a skillet over medium heat, add olive oil. Once hot, add minced garlic and cook for 30 seconds. Add shredded chicken, cumin, chili powder, salt, and pepper. Stir and cook for 3–4 minutes until heated through and well seasoned. Remove from heat and set aside.
Prepare Guacamole
Mash and mix ingredients
In a medium bowl, scoop out the avocados and mash them with a fork until mostly smooth. Add lime juice, chopped red onion, cilantro, jalapeño (if using), and salt. Mix well and set aside, covering to prevent browning.
Assemble and Cook Quesadillas
Assemble quesadillas
Lay out two tortillas. Evenly distribute a mixture of cheddar and Monterey Jack cheese over each tortilla, covering the entire surface. Top with the prepared chicken filling. Sprinkle a bit more cheese on top of the chicken, then place the remaining tortillas on top to form a sandwich.
Cook quesadillas
Heat 1 tablespoon of butter in a large skillet or griddle over medium heat. Carefully place one quesadilla in the pan and cook for 2–3 minutes per side, or until golden brown and cheese is melted. Repeat with remaining butter and quesadilla. Cut into wedges.
Serve
Serve the quesadilla wedges hot with a side of fresh guacamole and sour cream for dipping.
