1. Prepare the jalapeños
Wash the jalapeños thoroughly. Cut off the stems and slice into 1/2-inch thick rounds. If you prefer milder buttons, scoop out the seeds and membranes using a small spoon.
2. Optional - Fill with cream cheese
If desired, use a small spoon or piping bag to fill the center of each jalapeño round with a bit of cream cheese. This will reduce the heat and add a creamy texture.

3. Make the batter
In a medium bowl, whisk together the flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper. Gradually pour in the cold sparkling water and whisk until smooth. The batter should be thick enough to coat the jalapeños.
Frying
4. Heat the oil
Pour vegetable oil into a deep pot or fryer and heat to 350°F (175°C). Use a thermometer to maintain a consistent temperature.
5. Fry the jalapeños
Dip each jalapeño slice into the batter, ensuring it’s fully coated, then carefully drop it into the hot oil. Fry in small batches to avoid crowding the pot. Cook for 2–3 minutes or until golden brown and crispy.
6. Drain the fried jalapeños
Use a slotted spoon to transfer the fried jalapeños to a paper towel-lined plate to drain excess oil. Allow to cool slightly before serving.
Serving
7. Serve with ranch dressing
Arrange the fried jalapeño buttons on a serving plate and serve warm with a side of tangy ranch dressing for dipping.
