Preparation

Grilled Chicken

1. Prepare Chicken

Cut the chicken thighs into bite-sized pieces and place them in a bowl.

2. Marinate Chicken

In a separate bowl, mix soy sauce, sake, mirin, and sugar until the sugar dissolves. Pour this marinade over the chicken and let it marinate for at least 30 minutes.

3. Skewer Chicken

Thread the marinated chicken pieces onto skewers, alternating with pieces of green onion.

4. Grill Chicken

Preheat the grill to medium-high heat. Grill the skewers for about 3-4 minutes on each side, basting with the tare sauce during cooking.

Shiitake Tare

5. Prepare Mushrooms

Soak the dried shiitake mushrooms in 250 ml of water for at least 30 minutes until they are rehydrated.

6. Make Tare Sauce

In a saucepan, combine the rehydrated mushrooms (finely chopped), the soaking water, soy sauce, sake, mirin, and sugar. Bring to a boil and then reduce heat to simmer for 10 minutes until thickened.

Shiso Verde

7. Prepare Shiso Verde

Stack the shiso leaves, roll them up tightly, and slice them into thin ribbons. Combine with lemon zest and a pinch of salt.

Masago Arare

8. Prepare Masago Arare

In a small bowl, combine the masago with crushed arare rice crackers for added texture.
