Preparing Sushi Rice

Rinse the Rice

Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes.

Cook the Rice

In a medium saucepan, combine rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium heat, then cover and reduce heat to low. Cook for 20 minutes or until water is absorbed. Remove from heat and let sit covered for 10 minutes.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt. Heat in the microwave for 30 seconds or until sugar is dissolved. Gently fold this mixture into the cooked rice with a spatula. Allow the rice to cool to room temperature.

Prepare the Ingredients

Dice the fresh tuna or salmon into small cubes, and slice the avocado and cucumber into thin strips. Set aside.

Mix the Cream Cheese

In a bowl, soften the cream cheese if needed, and mix it with a fork to make it spreadable.

Assembling the Rolls

Lay the Nori

On a bamboo sushi mat, lay a sheet of nori, shiny side down.

Spread the Rice

With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Add Fillings

Spread a thin layer of cream cheese over the rice. Add a line of diced fish, avocado slices, and cucumber strips in the center.

Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

Slice and Serve

Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with toasted sesame seeds and serve with soy sauce, wasabi, and pickled ginger on the side.
