Fried Chicken
1. Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Add the chicken pieces, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.

In a shallow dish, combine the all-purpose flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
3. Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).
4. Coat the Chicken
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour mixture, ensuring they are evenly coated.
5. Fry the Chicken
Carefully place the coated chicken pieces into the hot oil, working in batches to avoid overcrowding. Fry for about 15-18 minutes or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
6. Drain and Rest
Remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Allow to rest for 5 minutes before serving.
