Preparation of the Base

Prepare the Gelatin
In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for about 5 minutes to bloom.

Cook the Sugar Mixture
In a saucepan, combine sugar, cornstarch, and the remaining 3/4 cup of water. Cook over medium heat while stirring until the mixture thickens and begins to boil.

Add the Gelatin
Remove the saucepan from heat and stir in the bloomed gelatin, rose water, and lemon juice until well combined.
Incorporating Flavorings

Add Ume Plum Puree
Stir in the ume plum puree and orgeat syrup into the gelatin mixture until fully incorporated.

Incorporate Vodka
Add the vodka to the mixture, stirring well to combine all the ingredients evenly.
Setting the Turkish Delight

Pour into a Pan
Line an 8x8 inch baking dish with parchment paper and pour the mixture into the dish, spreading it evenly.

Let it Set
Allow the mixture to cool at room temperature for about 4-6 hours, or until fully set.

In a separate bowl, mix the cornstarch and powdered sugar together.

Once the Turkish delight is set, cut it into squares and roll each piece in the cornstarch and powdered sugar mixture to coat.

Store the Turkish delight in an airtight container at room temperature, separated by layers of parchment paper.
