Steak Preparation

Season the Steak
Sprinkle both sides of the ribeye steaks with salt and black pepper. Let them sit at room temperature for about 30 minutes to absorb the seasoning.

Cook the Steak
Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the steaks. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let rest for 5 minutes.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to make fries. Rinse the cut potatoes in cold water to remove excess starch and then pat them dry with a clean towel.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a candy thermometer to check the temperature.

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry for about 4-5 minutes until golden brown. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt immediately.

Make the Herb Butter
In a small bowl, mix the softened unsalted butter with chopped parsley, chives, minced garlic, lemon juice, and salt to taste. Blend until well combined.
