Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Cut the cold unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Combine Wet Ingredients
In a separate bowl, mix the buttermilk and honey until well combined.

Form the Dough
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix.

Shape and Cut Biscuits
Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.

Bake the biscuits in the preheated oven for 12-15 minutes, or until golden brown on top.

Prepare the Fruit
Wash and chop the fresh fruit into small pieces if necessary.

Simmer
Reduce the heat to low and let the mixture simmer for about 15-20 minutes, or until it thickens to your desired consistency.

Remove the jam from heat and let it cool before transferring to a jar. Store in the refrigerator for up to 2 weeks.
