Method
Preparing the Bone Marrow
Preheat Oven
Preheat your oven to 450°F (230°C).
Prepare the Bones
Place the beef marrow bones on a baking sheet. Drizzle with olive oil and season with sea salt and black pepper.
Roast the Bones
Roast in the preheated oven for about 15-20 minutes, or until the marrow is soft and begins to ooze out of the bones.
Making Chimichurri Sauce
Combine Ingredients
In a bowl, mix together the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, and sea salt.
Mix Well
Stir until thoroughly combined. Let sit for at least 10 minutes to allow flavors to meld.
Grilling the Bread
Serving
Plate the Dish
Remove the roasted bone marrow from the oven and transfer to a serving platter.
Add Chimichurri
Serve warm with chimichurri sauce drizzled on top or on the side.

Serve the roasted bone marrow with the grilled bread for dipping.
