Cooking the Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and set aside.
Preparing the Vegetables

Chop the Vegetables
While the pasta cooks, wash and chop the bell pepper, zucchini, carrot, and cherry tomatoes. Mince the garlic.
Making the Sauce

Sauté the Garlic and Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped bell pepper, zucchini, carrot, and cherry tomatoes to the skillet. Cook for about 5-7 minutes until the vegetables are tender.

Add Spinach
Stir in the fresh spinach and cook for an additional 2-3 minutes, until wilted.

Combine with Pasta
Add the cooked pasta to the skillet with the sautéed vegetables. Season with salt and black pepper. Toss everything together until well combined. If desired, add grated Parmesan cheese and toss again.

Garnish
If using, sprinkle fresh basil on top before serving.
