Croquette Preparation

    Cook the Green Garbanzo Beans

    In a pot, bring water to a boil. Add green garbanzo beans and cook for 10-15 minutes until tender. Drain and let cool.

    Prepare the Mixture

    In a large bowl, mash the cooked green garbanzo beans. Add chopped onion, minced garlic, cilantro, rice flour, curry powder, salt, and black pepper. Mix until well combined.

    Form the Croquettes

    Shape the mixture into small patties or balls, about 2 inches in diameter. Place on a tray and refrigerate for 30 minutes to firm up.

    Fry the Croquettes

    In a deep skillet, heat oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Goan Curry Sauce

    Prepare the Sauce

    In a saucepan, combine coconut milk, Goan curry paste, and vegetable broth. Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally.

    Finish the Sauce

    Stir in lime juice and season with salt to taste. Remove from heat and set aside.

Avocado and Melon Salad

    Combine Ingredients

    In a bowl, gently toss together the diced avocado, cubed melon, lime zest, and salt. Set aside.

Sikil P'ak Preparation

    Toast the Pumpkin Seeds

    In a dry skillet, toast pumpkin seeds over medium heat until they begin to pop, about 3-5 minutes. Let cool.

    Make the Sikil P'ak

    In a blender, combine toasted pumpkin seeds, chopped tomato, green chili, cilantro, and salt. Blend until smooth, adding water if needed to achieve desired consistency.
