In a large bowl, combine the buttermilk, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

In another bowl, mix the all-purpose flour, cornstarch, paprika, salt, and black pepper. This will be used for breading the chicken.

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Remove the chicken from the marinade and let excess buttermilk drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.
