Prepare Cobia Collar

    Clean and Season

    Rinse the cobia collar under cold water and pat dry with paper towels. Rub the collar with olive oil, salt, and black pepper, ensuring it is evenly coated. Let it marinate for 15 minutes.

    Grill or Roast

    Preheat your grill to medium-high heat. Place the marinated cobia collar on the grill and cook for about 8-10 minutes per side, or until the fish is cooked through and has nice grill marks. Alternatively, you can roast it in an oven at 400°F (200°C) for about 20-25 minutes.

Make Nuoc Cham Sauce

    Combine Ingredients

    In a bowl, whisk together fish sauce, lime juice, sugar, minced garlic, chopped Thai chilis, and water until the sugar is dissolved. Adjust the taste to your preference by adding more sugar or lime juice if desired.

    Once the cobia collar is cooked, remove it from the grill or oven and let it rest for a few minutes. Serve it on a large platter, drizzled with the nuoc cham sauce and garnished with chopped cilantro.
