Method
Crust Preparation
- 1
Make the Dough
In a mixing bowl, whisk together the all-purpose flour, cocoa powder, powdered sugar, and salt until well combined.
- 2
Add Butter
Cut the unsalted butter into small cubes and add it to the dry mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- 3
Incorporate Egg Yolk
Add the egg yolk to the mixture and mix until just combined.
- 4
Add Ice Water
Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. If it’s too crumbly, add a little more water.
- 5
Chill the Dough
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- 6
Preheat Oven
Preheat the oven to 350°F (175°C).
- 7
- 8
Blind Bake
Place parchment paper over the crust and fill it with pie weights or dried beans. Bake in the preheated oven for 15 minutes, then remove the weights and parchment, and bake for another 10 minutes until the crust is set. Let it cool.
Filling Preparation
- 9
Heat Cream
In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat.
- 10
Melt Chocolate
Add the chopped bittersweet chocolate to the hot cream and let it sit for a minute. Stir until smooth and fully melted.
- 11
Whisk Eggs and Sugar
In a separate bowl, whisk together the eggs and granulated sugar until pale and thick.
- 12
Combine Mixtures
Gradually pour the chocolate mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling. Stir in the vanilla extract and sea salt.
- 13
Pour Filling into Crust
Pour the chocolate filling into the cooled crust, smoothing the top with a spatula.
- 14
Bake Tart
Bake in the oven for 20-25 minutes, or until the filling is set but still slightly wobbly in the center.
- 15
Cool and Serve
Allow the tart to cool at room temperature for at least 1 hour before slicing. Optionally, sprinkle with extra sea salt before serving.
