Method
Preparing the Octopus

Clean the Octopus
Rinse the octopus under cold water and remove the beak and ink sac if not already done by the vendor.

Marinate
In a large bowl, combine olive oil, minced garlic, lemon juice, paprika, salt, and black pepper to taste. Add the cleaned octopus and let it marinate for at least 1 hour in the refrigerator.
Roasting the Potatoes

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Potatoes
Wash the baby potatoes and cut them in half. In a bowl, toss the potatoes with olive oil, fresh rosemary, garlic powder, salt, and black pepper.

Roast the Potatoes
Spread the seasoned potatoes on a baking sheet and roast in the preheated oven for about 30-35 minutes or until golden brown and crispy.
Grilling the Octopus

Preheat the Grill
Preheat your grill to medium-high heat.

Grill the Octopus
Remove the marinated octopus from the refrigerator and place it on the grill. Grill for about 3-4 minutes per side, or until charred and cooked through.
Serving

Garnish and Serve
Chop the fresh parsley and mix with lemon zest. Serve the grilled octopus on a plate with roasted potatoes on the side, garnished with the parsley and lemon zest mixture.
