Preparation

    Prepare the Meat

    Season the beef short ribs with salt and black pepper. Let them sit at room temperature for about 30 minutes.

    Chop the Vegetables

    Chop the carrots, onion, celery, and potatoes into bite-sized pieces. Mince the garlic.

Cooking

    Sear the Ribs

    In a large Dutch oven, heat the olive oil over medium-high heat. Add the short ribs and sear them on all sides until they are browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onions, carrots, celery, and garlic. Sauté for about 5 minutes or until the onions are translucent.

    Deglaze the Pot

    Pour in the red wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes.

    Add Liquids and Herbs

    Add the beef broth, soy sauce, thyme, and rosemary to the pot. Stir to combine.

    Return the Ribs

    Return the seared short ribs to the pot, making sure they are submerged in the liquid. Add the chopped potatoes.

    Braise the Ribs

    Bring the pot to a gentle simmer, then cover and reduce the heat to low. Let it braise for 3-4 hours or until the meat is tender and falling off the bone.

Serving

    Plate and Serve

    Once cooked, remove the short ribs and vegetables from the pot. Serve hot with some of the braising liquid spooned over the top.
