Preparation of Bacon Jam

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease. Reserve about 2 tablespoons of bacon fat in the skillet.

    Sauté the Onions

    In the same skillet with reserved bacon fat, add the chopped onion. Cook over medium heat until the onions are soft and translucent, about 5-7 minutes.

    Add Ingredients

    Chop the cooked bacon into small pieces and return it to the skillet. Stir in the brown sugar, apple cider vinegar, maple syrup, black pepper, and red pepper flakes. Mix well.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 30-40 minutes, stirring occasionally, until it thickens and becomes jam-like.

    Blend (Optional)

    For a smoother texture, transfer the mixture to a food processor and pulse until you reach the desired consistency. Be careful, as the mixture will be hot.

    Let the bacon jam cool to room temperature before transferring it to a jar.
