Za'atar Short Rib

    Prepare the Short Ribs

    Pat the beef short ribs dry with paper towels. Season with salt and black pepper.

    Sear the Ribs

    In a large skillet over medium-high heat, add olive oil. When hot, sear the short ribs on all sides until browned, about 3-4 minutes per side.

    Add Flavorings

    Remove the short ribs from the skillet. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Stir in za'atar spice blend.

    Braise the Ribs

    Return the short ribs to the skillet and pour in beef broth. Bring to a simmer, cover, and reduce heat to low. Cook for 2.5 to 3 hours until the meat is tender.

    Garnish and Serve

    Once cooked, remove the short ribs and let them rest for a few minutes. Serve garnished with chopped parsley.

    Preheat your oven to 400°F (200°C). Clean the mushrooms and cut them into halves or quarters, depending on size.

    In a large bowl, toss the mushrooms with olive oil, skug spice blend, salt, and thyme leaves until evenly coated.

    Roast the Mushrooms

    Spread the seasoned mushrooms on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes until golden and tender.

    In a large mixing bowl, combine all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead for about 5 minutes until smooth.

    Divide the dough into equal portions, then flatten each portion and fill with beef fat or tallow and urfa pepper flakes. Fold and seal the edges.

    Heat a skillet over medium heat. Cook each roti for 2-3 minutes on each side until golden brown and cooked through. Keep warm until serving.
