Method

Preparation

1

Prepare the Scrambled Eggs

In a non-stick skillet over medium heat, crack the eggs and scramble them until just set, about 5 minutes. Remove from heat and set aside.

2

Sauté the Bell Peppers

In the same skillet, add a little oil and sauté the diced bell peppers until they're soft and slightly caramelized, about 4-5 minutes. Remove from heat.

3

Heat the Black Beans

In a small saucepan, heat the black beans over medium heat until warmed through, about 3-4 minutes. Stir occasionally.

Assembly

4

Assemble the Burrito

On a large flour tortilla, spread a layer of scrambled eggs, followed by a spoonful of black beans, sautéed bell peppers, a sprinkle of cheddar cheese, and a handful of chocolate chips.

5

Add Sauces

Drizzle a tablespoon of chocolate sauce and salsa verde over the filling.

6

Wrap the Burrito

Fold in the sides of the tortilla and then roll it tightly from the bottom up to enclose all the filling.

Cooking

7

Cook the Burrito

Place the wrapped burrito seam-side down on a hot skillet over medium heat. Cook for about 2-3 minutes on each side until the tortilla is golden brown and crispy.
