Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to make fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry with paper towels. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain them on paper towels. Immediately sprinkle with salt.

Add Truffle Oil and Parmesan
Drizzle the hot fries with truffle oil and toss them with grated Parmesan cheese. Mix well to ensure even coating.

Garnish and Serve
Garnish with chopped fresh parsley if desired. Serve hot.
