Fried Calamari

Prepare the Calamari
Clean the calamari by removing the head and innards. Cut the body into rings and set aside.

Make the Breading
In a bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.

Soak in Buttermilk
Place the calamari rings in a separate bowl and pour the buttermilk over them. Let them soak for about 30 minutes.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Coat and Fry
Remove the calamari from the buttermilk, letting excess drip off. Dredge the rings in the flour mixture until evenly coated. Fry in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Serve
Serve hot with marinara sauce on the side for dipping.
