Pasta & Cheese Mixture

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add 2 cups of elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Mix Cheese and Seasoning

    In a large mixing bowl, combine the cooked macaroni, 1 cup of cheddar cheese, 1 cup of mozzarella cheese, 0.5 cup of parmesan cheese, 0.5 cup of crumbled gorgonzola cheese, 1 beaten egg, 1 tsp of salt, and 0.5 tsp of black pepper. Mix well until all ingredients are evenly combined.

Truffle Alfredo Sauce

    Make the Alfredo Sauce

    In a saucepan over medium heat, melt 4 tablespoons of butter. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant. Stir in 1 cup of heavy cream, allowing it to heat, then add 1 tablespoon of truffle oil, 0.5 tsp of salt, and 0.5 tsp of black pepper. Bring to a gentle simmer and whisk in 0.25 cup of grated parmesan cheese until smooth. Remove from heat and set aside.

Breading & Frying

    Prepare for Breading

    Set up a breading station with three shallow bowls: one with 1 cup of flour mixed with 0.5 tsp of salt and 0.5 tsp of black pepper, another with 2 beaten eggs, and the third with 2 cups of breadcrumbs.

    Form Mac & Cheese Bites

    Take a spoonful of the mac and cheese mixture and form it into small bite-sized balls, about 1 inch in diameter.

    Bread the Bites

    Roll each mac and cheese ball in the flour, shake off excess, dip in the beaten egg, and then coat with breadcrumbs. Ensure each bite is fully covered.

    Fry the Bites

    In a deep frying pan, heat 4 cups of oil over medium-high heat until hot. Carefully add the breaded mac and cheese bites in batches, frying for 3-4 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.

Serving

    Serve with Sauce

    Serve the crispy mac & cheese bites warm, drizzled with truffle alfredo sauce or with the sauce on the side for dipping.
