Cook the Pasta

In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Preheat the Oven

Preheat your oven to 350°F (175°C) while you prepare the cheese sauce.

Make the Cheese Sauce

In a large saucepan over medium heat, melt 2 tablespoons of butter (optional, if you want to make the sauce richer). Stir in the shredded asiago, fontina, smoked mozzarella, cheddar, and grated pecorino cheese until melted and smooth.

Season the cheese sauce with salt and black pepper to taste. Stir in the truffle oil for added flavor.

Combine Pasta and Cheese Sauce

In a large mixing bowl, combine the cooked penne pasta with the cheese sauce. Mix well to ensure the pasta is fully coated with the sauce.

Transfer the mac and cheese mixture into a greased baking dish. Top with herbed breadcrumbs evenly over the surface.
