    Cook the Capellini

    Bring a large pot of salted water to a boil. Add the capellini pasta and cook according to package instructions until al dente, usually about 3-4 minutes. Drain and set aside.

    Toast the Pine Nuts

    In a small dry skillet over medium heat, add the pine nuts. Toast them for about 3-5 minutes, stirring frequently, until they are golden brown. Remove from heat and set aside.

Cooking the Shrimp and Vegetables

    Sauté the Garlic and Mushrooms

    In a large skillet, melt 4 tablespoons of butter over medium heat. Add the minced garlic and sliced mushrooms. Sauté for about 5-7 minutes until the mushrooms are tender and the garlic is fragrant.

    Add the Shrimp

    Add the jumbo shrimp to the skillet. Cook for about 3-4 minutes, or until the shrimp turn pink and opaque. Season with salt and black pepper to taste.

    Incorporate Spinach

    Add the fresh spinach to the skillet. Cook for an additional 2-3 minutes until the spinach wilts.

Finishing the Dish

    Add the cooked capellini pasta to the skillet with the shrimp and vegetables. Pour in the lemon juice and remaining 4 tablespoons of butter. Toss everything together until well combined and heated through.

    Serve the dish warm, garnished with toasted pine nuts. Adjust seasoning with additional salt and pepper if needed.
