    Chop Vegetables

    Chop the onion, celery, and carrot into small, even pieces. Mince the garlic and set them aside.

    Prepare Tomatoes

    Wash the plum tomatoes and chop them into quarters.

    Chop Herbs

    Chop the fresh basil and oregano finely and set aside.

Cooking

    Sauté the Base

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Tomatoes and Broth

    Add the chopped plum tomatoes to the pot and stir for another 2 minutes. Pour in the vegetable broth and bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let the soup simmer uncovered for about 20 minutes, stirring occasionally.

    Season and Add Herbs

    After 20 minutes, stir in the chopped basil and oregano, along with salt and black pepper. Let it simmer for an additional 5 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender in batches.

    Serve

    Taste the soup and adjust seasoning if necessary. Serve hot, garnished with additional fresh herbs if desired.
