Potato Preparation

Method

Potato Preparation

  1. 1

    Cut the Potatoes

Wash and peel the russet potatoes. Cut each potato into thin strips (about 1/4 inch thick) to create fries.

  2. 2

    Soak the Fries

Place the cut fries in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch.

  3. 3

    Dry the Fries

After soaking, drain the fries and pat them dry with a clean kitchen towel to remove moisture.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  5. 5

    Fry the Potatoes

Carefully add a handful of fries to the hot oil and fry in batches for about 4-5 minutes until golden brown. Remove and place on paper towels to drain excess oil. Sprinkle with salt immediately.

Topping

  1. 6

    Add Toppings

Once the fries are fried and drained, transfer them to a large mixing bowl. Drizzle the truffle oil over the fries and toss to coat evenly.

  2. 7

    Sprinkle with Parmesan

Add the grated Parmesan cheese, chopped parsley, and black pepper to the fries. Toss again until the fries are well coated with the cheese and seasonings.
