Preparing the Ingredients

    Slice the Onions

    Peel and thinly slice the onions.

    Clean the Mushrooms

    Wipe the mushrooms clean with a damp cloth and slice them.

    Prepare the Herbs

    Chop the herbs finely if using fresh thyme or rosemary.

Cooking

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of truffle oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-15 minutes until they are golden brown and caramelized.

    Cook the Mushrooms

    Add the sliced mushrooms to the skillet with the caramelized onions. Cook for an additional 5-7 minutes until the mushrooms are tender and have released their moisture.

    Add Herbs and Truffle Oil

    Stir in the chopped herbs and the remaining tablespoon of truffle oil. Cook for another 2 minutes to combine the flavors. Season with salt and pepper to taste.

Assembling the Dish

    Add Cheese

    Remove the skillet from heat and crumble the goat cheese over the mushroom and onion mixture. Then sprinkle the shredded mozzarella cheese on top.

    Melt the Cheese

    Place the skillet under a broiler for 2-3 minutes, or until the mozzarella is melted and bubbly. Keep an eye on it to prevent burning.

Serving

    Plate the Dish

    Remove from oven and let it cool for a minute. Serve hot as an appetizer or side dish.
