Prepare the Ravioli Dough

    Make the Dough

    In a large bowl, mix the flour and salt. Create a well in the center, then crack the eggs into the well. Using a fork, beat the eggs and gradually incorporate the flour until a dough forms.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Prepare the Lobster Filling

    Mix the Filling

    In a mixing bowl, combine the cooked lobster meat, ricotta cheese, grated Parmesan, salt, black pepper, and chopped chives. Mix until well combined.

Assemble the Ravioli

    Roll Out Dough

    Divide the dough into four pieces. Roll out each piece using a pasta machine or rolling pin until thin. Dust with flour to prevent sticking.

    Fill the Ravioli

    Place small mounds of lobster filling on one sheet of dough, spacing them about 1 inch apart. Moisten the edges with water, then place another sheet of dough on top. Press down around the filling to seal, then cut into squares.

Cook the Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes until they float. Remove with a slotted spoon and set aside.

Prepare the Lemon Butter Wine Sauce

    Cook the Shrimp

    In a skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cook until pink, about 3-4 minutes.

    Pour in the white wine and lemon juice. Let it simmer for 2-3 minutes until slightly reduced. Season with salt and black pepper to taste.

    Gently add the cooked ravioli to the skillet and toss to coat in the sauce. Cook for an additional 2 minutes.
