    Prepare the Seafood

    In a pot, bring water to a boil and add the lobster. Cook for about 5 minutes until the lobster is bright red and cooked through. Remove the lobster, let it cool, and chop the meat into bite-sized pieces. Set aside. In the same pot, add the shrimp and cook for 2-3 minutes until pink and opaque. Remove and set aside.

Cooking the Bisque

    Sauté the Vegetables

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened. Stir in the minced garlic and cook for another minute.

    Add Tomato Paste and Stock

    Stir in the tomato paste and cook for 2 minutes. Pour in the fish stock, and add the bay leaf, thyme, salt, black pepper, and cayenne pepper. Bring to a simmer and let it cook for 20 minutes.

    Blend the Mixture

    Remove the bay leaf. Using an immersion blender, blend the mixture until smooth. You can also transfer it to a blender in batches and blend until smooth, then return to the pot.

    Add the Cream and Seafood

    Stir in the heavy cream, cooked lobster, and shrimp. Let it simmer for another 5-10 minutes until heated through. Adjust seasoning to taste.

Serving

    Garnish and Serve

    Ladle the bisque into bowls, garnish with chopped chives, and serve with lemon wedges on the side.
