Shred or chop the roasted chicken into bite-sized pieces. Set aside.

Wash and chop the romaine lettuce into bite-sized pieces. Dice the roma tomatoes and cucumber. Set aside.

Crumble the feta cheese and grate the parmesan cheese. Set aside.
Making the Oreganata Dressing

Combine Dressing Ingredients
In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and black pepper until well combined.
Assembling the Salad

Mix the Salad
In a large salad bowl, combine the chopped romaine, diced roma tomatoes, diced cucumber, chopped pepperoni, shredded roasted chicken, crumbled feta, and grated parmesan.
