Method
Marinating the Chicken
- 1
In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
- 2
Add the chicken breasts to the bowl and coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Grilling the Chicken
- 3
Preheat the grill to medium-high heat.
- 4
Remove the chicken from the marinade and discard any leftover marinade.
- 5
Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- 6
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Preparing the Sides
- 7
For French Fries
Prepare French fries according to the package instructions or fry them fresh in hot oil until golden brown. Season with salt.
- 8
For Broccolini
Steam or blanch broccolini in boiling water for 3-4 minutes until bright green and tender-crisp. Season with salt and a drizzle of olive oil.
- 9
For Salad
In a large bowl, combine mixed salad greens. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper to taste. Toss gently to combine.
