    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are fully coated with butter.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to ensure an even layer.

    Bake the Crust

    Bake in the preheated oven for about 10 minutes or until lightly golden. Remove from the oven and allow to cool while preparing the filling.

Filling

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and mix until well combined.

    Add Remaining Ingredients

    Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.

    Bake the Cheesecake

    Pour the filling into the cooled crust and smooth the top. Bake in the oven for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

    Chill the Cheesecake

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

Topping

    Prepare the Strawberry Topping

    In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries with the sugar and juice.

    Let the Topping Marinate

    Allow the strawberries to sit for about 30 minutes to release their juices.

    Serve the Cheesecake

    Once the cheesecake has chilled, remove it from the springform pan and top with the marinated strawberries before serving.
